Vermicelli Kheer
Ingredients
1 cup vermicelli, broken into smaller pieces
2 cups milk
3/4 cup granulated sugar
1 tsp ghee (clarified butter)
4 - 5 strands of saffron (optional)
10 - 15 cashews , broken into pieces
10 - 15 raisins or handful of slivered almonds.
Method
In a thick bottomed pan, add the ghee and set on medium heat.
Add the vermicelli pieces and fry until lightly browned.
Make sure that the vermicelli does not burn,
else the end result will not be too pleasant !
On medium heat, this process will take about 10 minutes.
Remove the fried vermicelli into a plate. In the same pan,
fry the cashews / raisins / almonds. Add the vermicelli back to the pan.
Add the milk into the pan and stir thoroughly.
Add sugar to this mixture and combine until sugar dissolves.
Heat the mixture through, until the vermicelli cooks properly.
The mixture will tend to get thicker when cooled,
so you can add more milk at this stage, if required.
Add the saffron strands and reduce the heat to low.
Check the sweetness and add more sugar, if your taste buds demand it.
Thats it ! Your kheer is ready and can be served piping hot or chilled !
