Yummy Curd Rice
Ingredients
1 cup rice, cooked and cooled
1 tsp mustard
1 tsp cumin seeds(jeera)
1 tsp urad dal
1 tbsp chana dal
2 tsp oil
8 - 10 cashews(optional, but tastes amazingly delicious!)
2 -3 red chillies
(can be substituted with 2 -3 green chillies, finely chopped )
1.5 cups curds (plain yogurt)
a few sprigs of coriander leaves (washed and finely chopped)
a pinch of asafoetida
a pinch of sugar
salt to taste
2 - 3 curry leaves
0.5 tsp cumin powder (optional)
a pinch of black pepper powder(optional)
Method:
Cool the cooked rice and seperate the grains
In a large wok or a heavy bottomed vessel, heat the oil.
Add mustard, cumin, urad dal, chana dal and cashews.
Fry in oil till slightly brown.
Add the chillies and fry for some more time. If you are using red chillies,
then make sure that they dont get burnt.
Add the asafoetida and stir.
Add curry leaves and stir again..
Remove from the stove. Add curds, required salt, sugar and mix well
until you get a well blended mixture. If mixture is too thick add some water or milk.
Mix well. Add cumin pwder and blank pepper at this stage, if used.
Add the rice and combine together.
Garnish with coriander leaves.
Curd rice can be served at the end of a meal.
